Vinification facts: Cold maceration at 50°F for 24 hours; 100% fermented in 1 ton MacroBins at 78°F; punch downs were done 2 to 3 times per day and left one week on contact with skins once alcoholic fermentation was finished. Malolactic fermentation took place in barrels at 68°F
Color: Warm garnet color
Aroma: Beautifully aromatic as Cabernet Francs usually are; complexity of spices and red chili pepper with a little hint of leather
Taste: Light, soft tannins that keep you drinking into the sunset
